No, she wasn't my grandma. She may not be anybody's grandma, merely a marketing ploy, but it is a Kansas based business so I'm inclined to think there really is/was an Elsie Grace. The powdered mix for this was a "polite" purchase. You know those. You've been poking around in this person's shop for hours looking at the eclectic mix of goods. Everything is really, really neat, but none of it is anything you can't live without so you buy something small and inexpensive as a way of thanking the shop keeper for letting you occupy air space in their little antique shop for the past three hours.
Now that the air has a distinct chill to it, it's finally soup weather again. I'm sure that on it's own, the mix makes a quite delightful soup. It's got a surprising spice kick to it instead of what I always tend to think of as Kansas-bland. It's a creamy soup, full of flavor.
Still, I had to add something chunky to make it a meal rather than an appetizer. Two cups cubed ham, and approx. 4 cups cubed, unpeeled white rose potatos. The potatos were boiled for 15 minutes in the water recommended on the package prior to adding the soup mix (thus retaining all the good stuff that would get tossed when you drain the water from boiled potatos). The ham was added approx 20 minutes before the recommended cooking time was up. I did have to add an extra two cups of water as the resulting soup was too thick after being chunk-i-fied.
Cooked according to package directions it probably makes a pre-entree course that feeds 6 - 8. Following my add-ins, you get a meal for 6. Total cook time from prep to table: 1 hour. Bon apetite!
